Dear Friend,

Are you ready to blow the dust off and get out of the house? Come on; you know what we're talking about! Sitting inside all winter quiets the soul. It's time to get out and about and we've got some liquid soul for you; hey, I think we've even had a band out here by that name…coincidence? We think not.

Why the Easter Bunny is Hopped Up about Hops...

Hops are the female flower clusters (commonly called seed cones), of a hop species, Humulus lupulus. They are used primarily as a flavoring and stability agent in beer, to which they impart a bitter, tangy flavor. Hops were cultivated on a continuing basis around the 8th or 9th century AD in Bohemian gardens in Bavaria and other parts of Europe. However, the first documented use of hops in beer as a bittering agent is from the eleventh century. Hops are used extensively in brewing today for their many benefits, including balancing the sweetness of the malt with bitterness, contributing a variety of desirable flavors and aromas, and having an antibiotic effect that favors the activity of brewer's yeast over less desirable microorganisms. In other words hops taste good and help protect the beer. Yea Hops! Learn more about our Beer varieties.

Wine 101 - This month's featured wines

Riesling - Lake Michigan Shore

Riesling is one of the world’s greatest wine grapes. When properly grown, it has great flavor intensity with a wide range of flavors and a wonderfully rich and complex nose.

One of our most consistent wines, the vines were brought in from a research station on the Rhine river over twenty years ago. The maturity of the vines shows in the wine they produce with extremely vibrant and rich characteristics on both the palate and the nose. Fermented and aged in stainless steel to preserve the freshness of the fruit character.

Winemaker's Notes: Aromas of papaya and mango on the nose accentuate concentrated, intense notes of ripe green apple and pear on the palate. Crisp acidity and a soft sweetness combine for a clean refreshing finish.

Food Pairings: A perfect pairing with cheese plates, BBQ chicken, and ethnic dishes such as Thai or Mexican. View recipes paired with Riesling Wine.

Pinot Noir - Lake Michigan Shore

This is our third vintage using Burgundian clones of Pinot Noir which give this wine incredible length and fruit character on the palate. It was aged in 2-year-old American and French oak for 18 months to add a rich complexity to the finish

Winemaker's Notes: Bright ruby in color with a delicate and complex bouquet of rose petals and cherry aromas combine with strawberry tones on the mid-palate, garnet in color with a "terroir" finish usually found only in Burgundy itself. The palate is generous and round with wonderfully balanced acidity and richness.

Food Pairings: One of the few red wines that do well on almost any table this will pair well with turkey, ham, salmon, BBQ and even alongside a delicate cheese fondue or salad. View recipes paired with Pinot Noir.

Vineyard and Cellar Update

April is a busy month for us as we put the finishing touches on the white wines from last fall and start putting them in the bottle. We also continue building the foundation for the harvest of 2010 with our work in the vineyard. Pruning is a critical step in the process of managing the future of our vineyard. The choices we make today will impact our potential crop not just for this year but also in years to come...heavy!

Cheers from the cellar!
