February finds us gearing up for our busy season as we begin working in the vineyard, putting the finishing touches on last year's vintage and distilling. Because we are always striving to deliver an outstanding experience we are even expanding our staff training program. If you love having the tasting room and staff to yourself, this is a great time of year to visit us! You don't have to fight the crowds and we can spend more time explaining the nuances of all of our products.

Wine 101 - This month's featured wines

Cranberry Wine

A delicious blend of sweet and tart, this is one of our best selling wines. A perfect choice for the holiday season and the only civilized way to have your cranberries!

Just the right amount of tartness and sweetness, for a refreshing and flavorful treat. The entire fermentation process is carried out in stainless steel.

Winemaker's Notes: This wine has a bright Cranberry color with a fruity, aromatic nose including hints of cranberry and currant. The palate is very lively, with a sweetness that is perfectly balanced with a tart, refreshing finish.

Food Pairings: The perfect wine for chicken, turkey or pork. Great for holiday fare, it is also great for light lunches, dinners, or salads. View recipes paired with Cranberry Wine.

Raspberry Dessert Wine

Savor this sweet, vigorous fortified wine alone or pour over a dreamy slice of cheesecake. Mix with DiVine Vodka for a "fruitini". A delicious ingredient when cooking, don't miss our sinfully good recipes. A must try for raspberry lovers!

From the Cellar

In the vineyard...

We've been extending the trellis system (post & wires) at the Fox Hollow Vineyard that we partnered with in the fall. We'd like to thank the owners Bryan and Mary Staffin and their daughter Michaela for helping us produce world-class wines as they are truly made in the vineyard.

We will also start pruning the vineyard in the next few weeks which is our first sign of spring...never mind that silly groundhog! What does he know about wine anyway?

In the winery...

We've been cold stabilizing and filtering, which is the winemaking equivalent of watching paint dry, but a necessary step for a brilliantly clear glass of wine.

In the distillery...

Distilling has been non-stop for our DiVine Vodka and RCMS cognac style brandy and we'll be starting soon on the new Bourbon project...the barrels just arrived here!

In the brewery...

We are continuing to brew test batches for the Research and Beer-velopment Team who will be picking the final seasonal wheat recipe in February. Thanks again to those who've joined and to Bentwood Tavern at the Marina Grand Resort for providing the great food.

Frequently Asked Questions

What is all that swirling and sniffing about?

Though it may look a little silly (or snobby), swirling the wine in your glass actually opens up the wine (that's wine speak for lets in air) and helps bring out the aromas of your wine. This step is important because so much of tasting wine is about appreciating and identifying the different smells and tastes of each wine.

So go ahead, swirl it around and take a whiff. Do you like what you smell? What does it smell like? Swirl and sniff again. Is it the same or has it changed?

Now, taste the wine. Hold it in your mouth for a moment. How does the taste compare with the smell? Is it what you expected? How would you describe it?
