Scallops with Apple Cider and Gewürztraminer
Yield: 6 servings
INGREDIENTS
- 1 cup cider
- 1/2 cup Round Barn Gewürztraminer wine
- 6 tbsp butter
- 1 lb sea scallops
- Salt and pepper
- 1 Granny Smith apple peeled and cut into matchstick strips
- 16 small sage leaves, save a couple for garnish
- 2 Tbsp lemon juice
PREPARATION
Prepare the sauce: Reduce Gewürztraminer and cider to 1/4 cup over moderate heat (use wide bottomed non-reactive pan).
Season with pepper and salt and sauté the scallops in 2 tbsp butter. Add 2 tbsp butter to the pan and cook the apple sticks with sage, lemon juice and cider syrup until the sauce is slightly thickened - 3 mins. Finish with remaining 2 tbsp butter. Pour over scallops and serve with a puree; try a combination of potato with parsnip, turnip or rutabaga, or pureed green peas or yams.
