Peach Cobbler


4 Cups peeled and sliced ripe peaches
2/3 C sugar
1 tsp grated lemon zest
1 TBSP fresh lemon juice
tsp almond extract
Combine above ingredients in a buttered 2 qt. baking dish. Bake in preheated 400 degree oven for 20 minutes.

Sift

1 1/2 Cups unbleached all purpose flour
1 TBSP baking powder
1 TBSP sugar
1/2 tsp salt
Cut in 1/3 Cup vegetable shortening till mixture resembles cornmeal

Combine

1 lightly beaten egg
1/4 Cup milk
Add to dry ingredients until just combined.

Remove peaches from oven and drop dough by spoonfuls over surface. Sprinkle with 2 TBSP sugar. Return to oven for 15-20 minutes until top is firm and golden.

Whip 1 Cup heavy cream to soft peaks. Flavor with 3-4 TBSP Round Barn Peach PI. Serve warm with whipped cream.
