Peach Cobbler4 Cups peeled and sliced ripe peachesCombine above ingredients in a buttered 2 qt. baking dish. Bake in preheated 400 degree oven for 20 minutes. Sift 1 1/2 Cups unbleached all purpose flourCut in 1/3 Cup vegetable shortening till mixture resembles cornmeal Combine 1 lightly beaten eggAdd to dry ingredients until just combined. Remove peaches from oven and drop dough by spoonfuls over surface. Sprinkle with 2 TBSP sugar. Return to oven for 15-20 minutes until top is firm and golden. Whip 1 Cup heavy cream to soft peaks. Flavor with 3-4 TBSP Round Barn Peach PI. Serve warm with whipped cream. | |||
